- 1 teaspoon curry powder
- 1 teaspoon thyme
- 1 teaspoon ginger, grated
- 2 bay leaves
- 2 cups chicken or vegetable broth
- Salt and black pepper to taste
- Optional: 1 Scotch bonnet pepper or hot pepper (for extra heat)

For Garnish (Optional):

Fresh cilantro or parsley, chopped
 Fried plantains
 Grilled or fried chicken or fish

Instructions:


1. Rinse the Rice:

    Place the rice in a fine-mesh strainer and rinse it under cold running water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

2. Prepare the Tomato Base:
